About Us
Here at the Hilljack Sugar Shack, we truely are a family owned business. Owners Jim and Jesse Nivolo are father and son, and started making their own maple syrup 17 years ago when Jesse was just 8 years of age, and developed a sudden interest in the process of making syrup. A few years later at age 14, Jesse with help from the rest of the family, opened the Hilljack Sugar Shack and has been making and selling pure, delicious maple syrup and honey products ever since. We manufacture all of our products right here in the sugar house in Litchfield, CT, so there's no question of whether anything you get from us is authentic or not. Also, all of our tapped trees that we collect sap from are located in Litchfield County, Connecticut. During the syrup season we even do free tours of the sugar house, open to the public, to see just how clean we keep our equiptment, and how important it is to us to make quality syrup the right way, and to teach people how that is done. We have also done tours to pre-school classes and girl scout troops, along with tourist from all over the world. Not only is it a fun and interesting experience for the kids (as you can see on the left), but the parents think it's great to know their children are eating good quality products from right in their own community.
